Serves 4
Ingredients chicken with soy and Hokkien noodles:
450g (14 oz.) Hokkien noodles
1 tablespoon oil
500g (1lb) chicken fillets, sliced
2 cloves garlic, chopped
5cm (2 inch) piece of ginger, julienned
4 spring onions, diagonally sliced
2 carrots, diagonally sliced
250g (8 oz.) broccoli, cut into small florets
2 tablespoons mirin
4 tablespoons soy sauce
1 teaspoon soft brown sugar
2 tablespoons toasted sesame seeds
Directions chicken with soy and Hokkien noodles:
1. Cover all the noodles with some boiling water and leave them for about 10 minutes or so, or until they become just tender.
2. Heat a wok over kind of high heat, add some oil and swirl it to coat the side. Then add the chicken in small batches and stir-fry it for about 5 minutes or so. After that, return the chicken to the wok, add the garlic and the ginger and cook for about 1 minute, or until it becomes fragrant. Add the spring onion, the carrot and the broccoli and cook them for about 4-5 minutes, or until they become tender.
3. Mix together the mirin, the soy sauce and the sugar and stir into the chicken mixture. Drain all the noodles, add to the wok and cook until heated through. Serve it immediately sprinkled with the sesame seeds.
