Vegetarian Potato Soup

Traditional potato soup recipes often include bacon, sour cream, and other animal products. For vegetarians and vegans who want a hearty potato soup, this recipe is the answer. Kids and adults alike love this nutritious, satisfying soup.
3 med potatoes, skinned and cubed
1/2 lb. tofu
4 cups water (you can substitute one cup of water with vegetable broth)
1 medium yellow onion, chopped
1 teaspoon salt
1 T. olive oil
1/4 c. chopped parsley
black pepper to taste
Directions:
Fill a large pot with the water and vegetable broth. Bring the water to a simmer and lower the potatoes and onions into the pot. Add sea salt. Simmer for about 20 minutes or until potatoes are tender.
While the potatoes and onions are cooking, blend the tofu and olive oil in a food processor. When the potatoes and onions are done, add half of the batch to the food processor with the tofu and olive oil mix and process.
Return the contents of the food processor to the pot containing the water and the other half of the potato/onion mix. Add parsley and black pepper to taste. You might also want to add bacon bits or vegetarian bacon bits to the mix.
Simmer for a few minutes until warm enough to serve.

Hepatic gene expression following consumption of soy protein isolate in female Sprague-Dawley rats

Although soy foods have been recognized as an excellent source of protein, there have been recent concerns regarding potential adverse effects of isoflavone phytochemicals found in soy products, which are known to bind and activate estrogen receptors. In the study of global hepatic gene expression profiles in ovariectomized female Sprague-Dawley rats treated with 17beta-estradiol (E(2)) or fed with soy protein isolate (SPI) as a means of estimating potential estrogenicity of SPI. Female Sprague-Dawley rats were fed AIN-93G diets containing casein (CAS) or SPI starting at postnatal day (PND) 30. Rats were ovariectomized on PND 50 and infused with E(2) or vehicle in osmotic pumps for 14 d,  posted in PubMed, researchers indicated that Serum E(2) levels were within normal ranges for the rat and SPI feeding did not increase uterine wet weight in the absence or presence of E(2). SPI feeding altered (P<0 data-blogger-escaped-.05="">or=+/-1.5-fold) the expression of 82 genes, while E(2) treatment altered 892 genes. Moreover, only 4% of E(2)-affected genes were also modulated by SPI, including some whose expression was reversed by SPI feeding.

Vegetarian Chicken Noodle Soup Reviews

If you are looking for a water soluble source of fiber, you may want to look into trying shirataki noodles. These noodles are low in carbohydrates, low in calories, thin, translucent, and gelatinous just as most Japanese noodles are but these are made from the Konjac plant. It is composed of Glucomannan. The name Shirataki itself comes from the Japanese word meaning "White Waterfall" which is a good representation of these noodles.
Shirataki noodles can be found in most grocery stores and foreign food supplying stores. They come wet in pre-packaged liquid, or dry and last for about a year unopened. In the United States, there are two different types of Shirataki noodles usually sold. The traditional noodles have no gluten, no calories, and no net carbohydrates, which make them perfect for low carb diets. The tofu based noodles however, are becoming increasingly more popular because they have much more flavor and are still quite healthy. There are very few carbs in the tofu based noodles, and they are, even so, an excellent source of dietary fiber.
If you are interested in changing your diet by decreasing your carbohydrate intake, you should consider eating these noodles more often. Tofu Shirataki noodles are usually very cheap and are easy to find. Millions eat and buy tofu Shirataki noodles each day. The Japanese culture enjoys these noodles as part of a healthy diet. This is especially common in the Kansai region where they cut the Konnyaku jelly into small threads. In the Kanto region, these noodles are prepared by pouring the Konnyaku into holes and then into the hot water containing a lime concentration. Shirataki noodles sold with the tofu are considerably cheaper than buying the tofu and the noodles individually. Deals like this are very common and easy to find in most grocery stores.

Soy foods have been suggested to have both positive health benefits and potentially adverse effects as a result of their content of phytoestrogens.  In the study to compare the effects of soy protein isolate (SPI), the protein in soy infant formula, with those of 17β-estradiol (E2), on global gene expression profiles and morphology in the female rat mammary gland, with rats fed AIN-93G diets containing casein or SPI beginning on postnatal d 30, posted in PubMed, searchers found that SPI is only minimally estrogenic in the rat mammary gland even in the absence of endogenous estrogens.

Chinese food is one of the most delicious types of cuisine available to enjoy today. The wonderful thing about this food is that it tastes so good and is very easy to make. Chinese cuisine is a great addition to include to any family's homemade meals. Chinese cooking is actually super easy to learn with the right recipes and knowledge. Many of us love to visit our favorite Chinese restaurants or Chinese buffets and enjoy this mouth-watering cuisine. Just think of the great Chinese dishes many of us are so used to enjoying.

There are also several different styles within this cuisine. They include Mandarin cuisine, Cantonese cuisine, Szechwan cuisine and Hunan cuisine. Each of these cuisines has its own unique style and come from the four major regions of China. For instance, Cantonese is more mild and the most popular type of Chinese cuisine in the United States, while Szechwan is much spicier in taste. Mandarin food consists of many breads and noodles and Hunan food has more oil in it and is often richer in taste than Szechwan food, but may also be spicy or sweet and sour in flavor.

Prenatal and infant exposures and age at menarche

In the study comprised 33,501 women in the Sister Study who were 35-59 years of age at baseline (2003-2009) to investigate the prenatal and infant exposures in relation to age at menarche in a nationwide cohort of women who have a family history of breast cancer, posted in PubMed, researchers showed that Early menarche (≤10 or 11 years) was associated with having low birth weight, having had a teenage mother, being firstborn, and specific prenatal exposures: mother's smoking, diethylstilbestrol (DES), prepregnancy diabetes, and pregnancy-related hypertensive disorder. Prenatal exposures most strongly associated with very early menarche (≤10 years) were DES (rRR = 1.56 [95% CI = 1.24-1.96]), maternal prepregnancy diabetes (2.24 [1.37-3.68]), and pregnancy-related hypertensive disorder (1.45 [1.18-1.79]). Soy formula was associated with both very early menarche (1.21 [0.94-1.54]) and late menarche (14 years: 1.17 [0.98-1.40] or ≥15 years: 1.28 [1.06-1.56]).

Body Fat and Bone Mineral Content of Infants Fed Breast Milk, Cow's Milk Formula, or Soy Formula during the First Year of Life

In this study to characterize the growth, fat mass (FM), fat-free mass (FFM), and bone mineral content (BMC) longitudinally in healthy infants fed breast milk (BM), cow's milk formula (CMF), or soy formula (SF) during the first year of life, posted in PubMed, researchers showed that Infants fed CMF and SF had significantly different fat and bone accretion trajectories, and all infants fed formula were significantly different from infants fed BM. Infants fed SF had a leaner body phenotype throughout the first year of life, lower bone mineralization by age 3 months, and greater bone mineral accretion during the first year of life compared with infants fed BM or CMF. Although the body composition profiles are strikingly different in these 3 diet groups, the implications for long-term health outcomes and bone health remain unclear.

Tempeh Versus Tofu - Which Wins the Health Competition?

How Is Tempeh Different from Tofu, and Which Is Healthier?
Once close relatives derived from the soybean plant, Tempeh and Tofu were separated at adolescence, raised and formed for purpose in two different living environments. Yet now, they come together for one epic battle for vegetarian supremacy! Not knowing of their past, their disdain for one another is based on a misunderstanding of how similar and beautiful each is to one the other -- how... complementary... they are of one another. So we may all help to teach others and teach these native sons of soy how to better tolerate one another, we must first understand how Tempeh and Tofu came to be.
OK. Enough of that. Let's get right down to it: a primer on the soybean.
What is Tempeh? Tempeh Defined
Tempeh is to the soybean as spam is to ham, except far less disgusting and much better for you. Tempeh is made through a relatively simple process: the soybean is first made tender through soaking and then it's de-hulled. The beans are partially cooked, and then pressed into a layered cake or patty form. There are other forms of tempeh that can be derived from whole wheat or a mixture of soy and grains, yet the most commonly found variation is soy tempeh.
The protein in tempeh is far more digestible than what you would ingest through animal proteins, due to tempeh's fermentation process. As a result, combining tempeh with other meats or simply using it as a substitute has been known to greatly aid in overall digestive health. Different from tofu, tempeh is a whole soybean product that offers higher amounts of protein and dietary fiber, as well as vitamin content, all due to the fermentation process preserving the whole bean.
What is Tofu? Tofu Defined
Like tempeh, tofu is derived from the soybean, yet after the bean has been processed to the soy milk product. In it's simplest form, tofu is to the soybean as cottage cheese is to dairy milk. It is the curd of soy milk pressed into chunks, slabs or bricks. Of course there are varieties of tofu, ranging from what is known as silken or soft tofu, often used in desserts, to the more common western or dried tofu that is so versatile in cooking everything from traditional Asian cuisine to filling for soups. Full of iron and calcium, as well as being cholesterol free, you can see how it serves as a great addition to any diet, especially the diet of a pregnant or aging individual.
With regards to nutritional value, tofu does one-up tempeh as it offers more protein per carbohydrate, while offering a little more versatility in terms of the dishes and foods with which it can be combined. It is easily marinated and seasoned, can be made with egg, cinnamon, fruits and nuts -- offering a fairly wide variety of flavors. It can also be found in fermented varieties, such as pickled tofu, though this isn't necessarily for everyone. Therefore, in our quest to determine which soy reigns supreme, we're slightly stumped as they both offer great edible options.
A Few of the Best Tempeh Recipes
No. I'm not going to drop a list of ingredients that you must run out to the store and purchase, because tempeh is best used in substitutions of your other favorite or former recipes. For example, the Super Bowl is right around the corner, and regardless of how you feel about football, you'll probably be at a party. How about a little vegetarian chili, prepped with tempeh, organic powders, seasoning and vegetables, served with a tasty St. Peters English Ale -- an organic favorite.
For breakfast, depending on your desire, tempeh is the perfect substitute for bacon or sausage, and is darn tasty on a bagel with egg and cheese, or egg substitute if you prefer. Tempeh is also great after it has been marinated, to create sandwich meat, or flavor for salads. And when it comes right down to it, skillet frying it with a little sea-salt and a peppercorn variety makes it a great snack in and of itself.

Tofu Is A Wonder Food

People become more and more health conscious with each passing year. Fad diets, home gyms, and quick weight loss pills constantly flood the market. However, there has always been one tried and true road to good healthy; healthy eating. Finding ways to eat healthy can be difficult, especially with the high fat and cholesterol content that is found in red and white meats. But there is an alternative that has been long embraced by both eastern culture and vegetarians alike, and that alternative is tofu.
Tofu is made from soybean curd that is pressed into blocks that can be used in various recipes and methods of cooking. Different varieties of tofu are suited for different kinds of recipes. Soft tofu is a form of fresh tofu - produced directly from soy milk- and contains the highest moisture content of all varieties. Its custard-like texture makes it conducive to use as a dessert.
Firm tofu is a form of fresh tofu that has slightly less moisture content than soft tofu. While it is still soft in texture, it is able to hold its shape unlike soft tofu. The firmest form of fresh tofu is dried tofu. Dried tofu has the lowest moisture content and has the firmness of cooked meat. Dried tofu can be sliced, crumbled, or pressed into forms like noodles.
Tofu's appeal to chefs and diners is two fold. First and foremost, it has very little natural flavor so it can be used in a wide variety of dishes and sauces. Tofu's lack of flavor allows it to assume the flavors of the recipe without overpowering the dish. Its versatility is also evident in the preparation methods as well. Tofu can be served raw, fried, grilled, stewed, stir fried, in soups, or even as a filling or stuffing. But ultimately, tofu's wide appeal extends beyond its versatility. Its nutritional benefits make it a food of choice for so many health conscious people. Tofu is low in calories, high in protein, and has no cholesterol. The FDA states that a daily intake of twenty-five grams of soy protein, which is found in tofu, may reduce the risk of heart disease.
Tofu is literally a "wonder food" that acts as a canvas for flavors while providing tremendous health benefits. It is no wonder that tofu has become increasingly popular for food lovers and health conscious diners alike.

Korean Braised Tofu

Ok, so this is yet another recipe my mom picked up from her Korean cooking class (hey what can I say - they're good!). But let me tell you, this by far is my most favorite recipe out of all the ones she learned. It's savory, salty sweet, oniony, garlicky, gingery, and not so spicy. It is topped with basically raw garlic, ginger, and scallion - but don't worry. Their flavors marry so well together and with the braised tofu that somehow the garlic tastes less breath damaging, the ginger less biting, and the scallion less like...well...a scallion. Many times I even end up just eating the garlic ginger scallion topping by itself because it's so lip-smacking tasty!
On the serving plate, it's the perfect combo of juicy tofu, soy sauce, and sweet thinly sliced garlic, ginger, scallion, and red pepper. Not only is this my favorite Korean dish from the cooking class, it's also the most appetizing. As they say, we eat with our eyes first. And as soon as you see this dish, your eyes will be stuffing themselves silly! Before I say any more that might possibly bore you out of trying this - here's the recipe:
Braised Tofu
1 pack firm tofu
2 Tbsp starch
1 tsp salt
2 Tbsp vegetable oil
¼ oz peeled ginger
¼ oz peeled garlic
¼ oz scallion
¼ oz cleaned red pepper
3 Tbsp soy sauce
1 Tbsp cooking wine
1 Tbsp sugar
1 Tbsp rice wine
Cut tofu in half (not lengthwise) and then into ½ inch thick square slices. Pat tofu dry with paper towel. Sprinkle salt over one side. Coat all sides in starch and shake off the excess. Heat oil in a skillet and add tofu. Cook on both sides until golden brown. Turn off the stove. Julienne ginger, garlic, scallion, and red pepper. Mix soy sauce, cooking wine, sugar, and rice wine - this is for the sauce. Sprinkle the julienne ginger, garlic, scallion, and red pepper evenly over the tofu in the pan and pour in the sauce. Cook the tofu in the skillet over medium heat for 2 minutes. And enjoy!

According to the study by Faculty of Health and Welfare Science, Okayama Prefectural University, posted in PubMed, Soybean and various types of soy products, such as natto, tofu, miso, and soy sauce, have long been consumed in Japan. Soybean, a rich source of plant proteins, contains a relatively high amount of calcium as well as being an important source of isoflavones, a group of substances whose chemical structure is similar to that of estrogen. Natto, fermented soybeans, contains vitamin K, which is involved in the activation of osteocalcin. For bone health and osteoporosis prevention in Japanese, it is thus beneficial to consume adequate amounts of soybean and soy products on a daily basis.

Korean fermented red pepper plus soybean paste, improves glucose homeostasis

In the study to examine whether kochujang affected insulin secretion from beta-cells and/or peripheral insulin resistance in 90% pancreatectomized diabetic rats fed high-fat diets, posted in PubMed, showed that the combination of red pepper and fermented soybeans in kochujang improves glucose homeostasis by reducing insulin resistance, not by enhancing beta-cell function, in diabetic rats. The improvement is associated with decreased hepatic fat storage by the activation of adenosine monophosphate kinase.

Soy milk and cereals

Anticancer and antimetastatic properties of doenjang

Fermented soy foods, such as doenjang, are important components of the Korean diet.  
In the study to assess the effects of methanol extracts from doenjang prepared with long-term fermentation on tumor formation, natural killer cell activity in spleen, and glutathione S-transferase activity in liver in sarcoma-180 cell-transplanted mice, posted in PubMed, showed that doenjang fermented for 24 mo exhibited a two- to three-fold increase in antitumor effects on sarcoma-180-injected mice and antimetastatic effects in colon 26-M 3.1 cells in mice compared with the 3- or 6-mo fermented doenjang. The 24-mo fermentation was the most effective in preventing cancer by decreasing tumor formation and increasing natural killer cell activity in spleens and glutathione S-transferase activity in livers of mice.

Protein - Is Soy an Excellent Source of Protein for Health and Weight Loss Programs?

How much protein does your body need on a daily basis? There is no one size fits all answer. The Institute of Medicine recommends that adults get a minimum of 0.8 grams of protein for every kilogram of body weight per day. That is approximately 64 grams of protein for an adult that weighs 160 pounds.
Protein is in almost every body part including muscle, bone, skin and hair.
The human body needs approximately 20 different amino acids in order to synthesize proteins. The human body makes more than half of these amino acids on its own, while the remaining amino acids are not and cannot be produced by the body on its own, so they need to be supplied by eating foods that contain them.
Soy protein is considered a complete protein because it has all the essential amino acids the human body requires. The body does not store amino acids like it does fat and carbohydrates. So it needs to be replenished daily with food that contains the 9 essential amino acids that the human body requires and does not produce on its own.
Protein is very important to your overall health and can play an important role in a weight loss program. The body needs protein to maintain or build lean muscle mass.
