In the study to estimate dietary intake of phytoestrogens in Dutch middle-aged and elderly women and to describe their main sources. Women were recruited between 1993 and 1997 and aged 50-69 y at enrollment (Prospect-EPIC; n = 17,357)., posted in PubMed, researchers at the University Medical Center Utrecht, indicated that intake levels of phytoestrogen in our study population are low; however, they are comparable with intake levels previously reported for other Western cohorts. In this population, phytoestrogen intake consisted largely of lignans.

Dietary phytoestrogens, including isoflavones, lignans, and coumestrol, in nonvitamin, nonmineral supplements commonly consumed by women in Canada

In the examination of twenty-one nonvitamin, nonmineral dietary supplements commonly consumed by women in Canada were analyzed for isoflavones (formononetin, daidzein, genistein, glycitein), lignans (pinoresinol, lariciresinol, secoisolariciresinol, matairesinol), and coumestrol to complement our previously published food phytoestrogen database, posted in PubMed, suggested that Supplements containing soy or red clover had the highest concentrations of total isoflavones (728.2-35,417.0 ug/g) and total phytoestrogens (1030.1-35,517.7 ug/g) followed by licorice and licorice-containing supplements (41.3-363.3 ug/g isoflavones; 56.5-370.0 ug/g total phytoestrogens). Other supplements had considerably less isoflavones (</= 19.0 ug/g) and total phytoestrogens (</= 44.2 ug/g). Lignans were present in all (</= 298.9 ug/g), whereas coumestrol was either not present or present in only small amounts (</= 3.0 ug/g). Supplements differed in phytoestrogen profiles. The daily intake of isoflavones and lignans from some supplements may greatly exceed those from several servings of soy or vegetables. Hence, the intake of supplements should be taken into consideration in clinical or epidemiological studies for more accurate estimation of phytoestrogen intakes.

Phytoestrogen consumption and ovarian cancer

In a population-based case-control study to evaluate phytoestrogen intake from foods and supplements and epithelial ovarian cancer risk of a total of 205 cases and 390 controls were included in analyses., posted in PubMed, there was a suggestion of an inverse association with total phytoestrogen consumption (from foods and supplements), with an odds ratio (OR) of 0.62 (95% CI: 0.38-1.00; p for trend: 0.04) for the highest vs. lowest tertile of consumption, after adjusting for reproductive covariates, age, race, education, BMI, and total energy. Further adjustment for smoking and physical activity attenuated risk estimates (OR: 0.66; 95% CI: 0.41-1.08). There was little evidence of an inverse association for isoflavones, lignans, or coumestrol.

It's all in the bean! Guess what bean I'm talking about...
When I tell people that I love Tofu they always ask me "What is Tofu, anyway?" I'm not surprised that people don't know that Tofu is actually bean curd made with soybeans and was invented more than 2,000 years ago in China. Soy has been somewhat of a mystery to consumers, especially those that don't often veer from traditional American cuisine.
Soybeans also known as edamame and soy products such as Tofu or soy milk have made their way into mainstream grocery stores and restaurants. Soy-based products are a low-fat, cholesterol-free source of protein, which builds muscles, bones, skin, the antibodies that power your immune system and protect you from disease. They're also high in calcium, which builds healthy bones, teeth and can help prevent or decrease osteoporosis. If that isn't enough, this wonder bean has also been tied to weight loss.
A recent study published in the European Journal of Nutrition suggests that eating more soy can lower your body mass index. The body mass index is a health indicator that compares your weight to your height. I bet you're asking yourself, what type of soy should I buy? Here are my 3 rules:
Keep it Simple - The only soy products that go into my shopping cart are soy milk, tofu and whole soybeans. I try to avoid meat substitutes made of soy because they're usually heavily processed and often high in sodium. Firm tofu is a great substitute for meat in salads, stir-fries or sandwiches. Silken or soft tofu can substitute for dairy in dips, soups, sauces & even pudding. If you're trying silken tofu for the first time, I would recommend a 50/50 mixture, such as half yogurt, half tofu in a smoothie.
Reach for the whole soy - Look for the phrase "whole soybean" or "whole soy" on the label to make sure you're getting a product high in fiber. Fiber aids in digestion and helps maintain healthy cholesterol, blood glucose levels and other healthy nutrients. Whole soy has been linked in some studies to even help protect against some cancers.
Look for organic choices - Organic soy is free of toxins such as pesticides, fertilizers, herbicides and doesn't contain genetically modified organisms. Currently, genetically modified organisms have been studied for their possible link to food allergies.
I'd like to leave you with a healthy soy snack that you can try and I'll bet you'll be pleasantly surprised. Small Planet Tofu, why I love it! It's flavored with seasonings like green tea and lemon grass. Make it a meal by tossing baby greens with white balsamic vinegar, citrus juice; top with chilled wild rice, green tea tofu and sliced almonds. There you have it a little about soy! Green Tea Tofu Harumaki (Spring Rolls)

Ingredients:
* 6 tb soy sauce
* 6 ts sesame oil
* 375 g tofu; cut into cubes
* 6 tb olive oil
* 3 leek; cut into thin strips
* 3 carrot; cut into thin strips
* 225 g mangetout; cut into thin strips
* 6 cloves garlic; chopped
* 3 ts fresh root ginger; chopped
* 375 g button mushrooms; sliced
* 1 1/2 ts five spice powder
* 225 g beansprouts
* 3 ts cornflour
* 3 ts salt and freshly ground black pepper
* 2 tsp Matcha powder
* 3 200 g pack Spring Rolls Sheets
* 120 g solid vegetable oil; melted
Prep Time: 30 min
Cooking Time: 15-20 min
Instructions:
In a bowl, mix the soy sauce, sesame oil and 6 tablespoons cold water and add the tofu and marinate for approx 30 minutes.
Heat the oil in a frying pan or wok and stir fry the leek, carrot and mangetout strips for 2-4 minutes.
Add the garlic, ginger and mushrooms and cook for a further 3-5 minutes.
Add the tofu (reserving the marinade) with the five spice powder and beansprouts.
Blend the cornflour, the marinade and matcha powder and pour over the vegetables and cook gently until thickened, add seasoning and leave to cool.
Lay out spring rolls sheets to cooking sheets. Place a spoonful of vegetable mixture at one end of the sheet and roll up gently, folding the sides in.
Brush the other end with a little more vegetable oil to seal the pastry. Repeat for the remaining spring rolls.
Deep fry the spring rolls in hot oil preheated to 180 C, 350 F for approximately 5 minutes until golden brown. Drain well on absorbent kitchen paper.

Delicious And Nutritious Japanese Fried Tofu Recipe

Fried tofu is a popular Japanese cuisine. Preparation is simple
and easy. Fried tofu is known for its delicious taste, high nutritional
value and low calorie content. In the West, tofu probably is one of the
most popular Asian products. There are many different kinds of ways to
prepare tofu. Tofu can be prepared as a main dish or can also be used as
an ingredient to compliment other recipes. There are several types of
tofu available. Some are sold fresh, some are sold boiled, steamed or
fried.
Here is delicious recipe for tofu that is very easy to prepare.
Fried Tofu (for two)
Ingredients:
- Two tofu blocks
- One cup of Dashi (you can use beef bullion broth if dashi is not available)
-Two tablespoons of soy sauce
-Two tablespoons of mirin (if mirin is not available, you can use sweet Japanese rice wine, white wine will work too)
- Mix one tablespoon of corn starch in a small amount of water
- Use this corn starch to coat tofu
- One tablespoon of grated ginger
- Arrange to decorate
- Cooking oil
Preparation:
- Place the tofu in a flat plate, on a kitchen paper towel or on a soft cloth to cut.
- Put a kitchen paper on top of the tofu and place another flat plate on top of the kitchen paper. Slowly lift the plate and gently tun it sideways to let excess water off the tofu. Be careful not to crush the tofu when you are doing this.
- On the side, Prepare the dashi, mirin and soy sauce using a deep casserole or pan. Heat the casserole or pan and as soon as it boils, add corn starch and water, mix well.
- Now dry the tofu using a kitchen paper towel or a soft cloth and slice them in half. Lightly coat the tofu with corn starch.
- In a sauce pan, place plenty of cooking oil and fry the tofu until it turns to golden brown in color.
- Remove the sauce pan from the flame. Place the tofu on kitchen paper towels to remove excess cooking oil and place in a bowl.
- Add the sauce prepared previously on the tofu. Gently sprinkle a small amount of grated ginger on the tofu.
- You can also add grated radish, pepper, fish flakes, or some green if you like.
Goes well with white rice. Serve hot and enjoy.

In the review of a randomized, controlled trials of CAM therapies for menopausal symptoms in order to better inform practice and guide future research, posted in PubMed, showed that soy seems to have modest benefit for hot flashes, but studies are not conclusive. Isoflavone preparations seem to be less effective than soy foods. Black cohosh may be effective for menopausal symptoms, especially hot flashes, but the lack of adequate long-term safety data (mainly on estrogenic stimulation of the breast or endometrium) precludes recommending long-term use. 1/4 teaspoon almond extract

As you begin, place all the ingredients on the counter nearby so they will be easy to find. Flour the work area and then roll out the chilled sugar cookie dough to about an eight of an inch thick. With your rolling pin, roll the dough out to approximately eleven inches in diameter and then place this dough in a spring form pan. Preheat the oven to 375 degrees and bake the dough for twelve to fourteen minutes. Remove from the oven and set aside to cool.
Next, you will need to combine the cranberries, sugar, water, cornstarch and orange juice in a medium saucepan. Stir all the ingredients together and bring them to a boil for one minute. Remove this from the heat and let it cool. Drain the tofu, then wrap it in a paper towel to remove the excess water. Cut the tofu into pieces and then place it in a food processor or blender. Creating such a dish, the ingredients that are needed including: 160ml unsweetened soy milk, 250g wholemeal flour, 20g oil, 10g yeast, 10g sugar, a pinch of salt, ½ package extra firm tofu, 5 pieces dried Chinese mushrooms, 50g snow peas, 50g baby corn, 30g red pepper, 30g green pepper, 30g water chestnut, and 60ml hoison sauce.
The first step for this a healthy version of tofu pizza recipe is to create the pizza base. Sift the flour into a bowl. In a separate bowl, mix the sugar, yeast, and 50ml of the soy milk and sit the bowl somewhere warm until the contents start to foam.

After the yeast ferments, put the flour and salt into a large bowl, create a dent in the center of the flour and pour in the yeast mixture, along with the remainder of the soy milk and oil.
Tip the dough on to a lightly floured surface and knead the dough firmly until no longer sticky. Cover it with a cloth until it rises and has approximately doubled in size. Once ready, shape it in a pan and put the base on a floured baking sheet ready for topping.
Spread the hoisin sauce over the pizza dough. Place all of the vegetable toppings on top of the sauce, and sprinkle the top with crumbled, extra firm tofu. Bake in the preheated oven for 25-30 minutes at 350 degrees or until golden around the edges. You might consider using other toppings if you so desire.

In the study to provide guidance on optimal soy intake, this article evaluates Asian soy consumption and both clinical and Asian epidemiologic studies that examined the relationship between soy intake and a variety of health outcomes. Chinese Tofu Recipe - Tofu With Chinese Sausage Recipe

Tofu is a food originated from China, and is made by coagulating
soy milk. Tofu is low in calories, no saturated fat or cholesterol, and
contain pretty high amount of iron. Besides, due to tofu is made by soy
milk, it is high in protein as well. Thus, for those weight watchers,
vegetarians, health conscious and dairy product intolerance people, tofu
is always their good choice of food.
Tofu itself has very little flavor or smell. So it can be used to cook with any dishes or ingredients. However, also due to its blend taste, it is not easy to cook a nice, tasty tofu dish as well. In order to use tofu as main ingredient for the dish, one would need to be able to make the taste or essence of side ingredients to be blended into the tofu.
There are many different types of tofu in the market. One needs to choose the right tofu for right dish. For example, soft tofu is suitable for soup, dessert, and steaming, and firm tofu is more suitable for stir fry, or deep fried.
Here is one easy-to-follow Chinese tofu recipe
Ingredients:
• 2 Chinese sausage (can get it from Asian market)
• 2 cakes medium firm tofu
• 1 spring onion, cut into 1 inch sections
• 1 red chili, thinly sliced
• 1/2 teaspoon salt
• 1 teaspoon soy sauce
• 0.8 cup water
• 3 cup cooking oil
• 1 teaspoon cornstarch dissolved in 1 tablespoon water
• Pinch of MSG
Methods:
1. Put in the Chinese sausage into a steamer, steam for 12 minutes. Cut them diagonally into thin slices
2. Cut the tofu into 12 square pieces.
3. Heat up wok and cooking oil over medium heat. Fried tofu for 3 minutes until golden brown. Drain with paper towels and set aside
4. Heat wok and 1 teaspoon cooking oil. Stir fry spring onion and red chili for about 2 minutes. Add in salt, soy sauce, water and fried tofu. Stir and simmer for 5 minutes over medium heat
5. Add in Chinese sausages and cornstarch mixture. Stir well until sauce is thickened
6. Ready to serve

The Advantages of Pressing Tofu

Pressing tofu is a very simple way to make any tofu dish taste
better and improve the texture. Although not all tofu recipes specify to
use pressed tofu, it can be applied to any recipe. Some people buy tofu
presses which are in the shape of a box and specifically designed to
press tofu. However, there is no particular advantage to this as the
same results can be seen with some paper towel and a heavy object.
The main advantage of pressing tofu is that it enhances the flavor. The liquid that tofu is packaged in is not as tasty as the marinate or the flavor of the dish you are cooking. Therefore, by removing this tasteless liquid, the tofu can absorb more of the flavors you are cooking with. For this very reason, many restaurants press a majority of their tofu dishes.
When cooking tofu, some people complain about the smell of the liquid that it is packaged in and is therefore a 'turn off' to cooking and eating tofu. If this is the case with you, pressing tofu will remove this liquid and although you will still be able to smell it, you will have peace of mind in knowing that you are not eating this smelly liquid.
If you have not pressed tofu before you should definitely give it a go. If you have ever wondered why you are unable to cook tofu like restaurants do then pressing the tofu is probably the reason. According to the study of Dr. Lanou AJ, posted in PubMed, in the evidence is reviewed regarding the question of whether soy foods contribute to a dietary pattern in humans that supports and promotes bone health, showed that Soy foods are associated with improved markers of bone health and improved outcomes, especially among Asian women. Although the optimal amounts and types of soy foods needed to support bone health are not yet clear, dietary pattern evidence suggests that regular consumption of soy foods is likely to be useful for optimal bone health as an integral part of a dietary pattern that is built largely from whole plant foods.

Two Simple and Authentic Udon Recipes

Having lived in Japan for 8 years, I can personally attest to
Udon noodles having saved my poor student butt a number of times. A
straight bowl of Udon noodles with an egg can be had for about $3 in
Kyoto, so it's pretty much a standard for every student in the weeks (or
god forbid months) before the next loan check comes in. There's even a
famous little shop in Kyoto that will let you have a bowl for free if
you do half hour of washing plates afterward!
But first, I must clear something up. While browsing the web for Udon recipes, I find hundreds of sites that refer to the thin regular noodles as Udon. They aren't, they are simply Ramen noodles. Only one particular part of Japan has thin Udon noodles, and they don't export it. Udon noodles are very much thicker and altogether more meatier than regular noodles, so please don't confuse the two. That isn't to say that Ramen noodles aren't just as tasty, but the two are very distinct. In fact, if you wanted to make any of these recipes with with either kind of noodle, you could probably get away with it.
So today, I'm going to teach you two of my favorite student recipes from my memories of Udon. Yes, I do have many memories of Udon from Kyoto - not temples, shrines, geisha girls and beautiful scenery - but Udon. Anyway, as the Japanese would say "Let's learning cooking Udon!"
Kitsune Udon:
The is the incredibly cheap kind of Udon dish you can buy in Kyoto, though you could actually spend a fortune on one if you went to one of the high class Udon places. The name Kitsune, meaning Fox, comes from a legend that Japanese foxes like to eat the fried tofu stuff. Or so they say... It's a very simple recipe, and you will need:
- 1 or 2 slices of Abura Age, or Fried Tofu
- 1 pack of Udon per person.
- Dashi
- Soy sauce
- Mirin
- Kamaboko fish cake
Preparation:
We need to do a little prep on the Abura Age before cooking the main dish. First, pour boiling water over it to remove the excess oil. Next, put the Abura Age in a pan along with 3/4 cup of dashi, 1 tablespoon soy sauce, 1 tablespoon mirin, and 2 tablespoons of sugar. Simmer this until the watery part has disappeared leaving only the flavor filled Abura Age bits.
Next, heat the Udon noodles as indicated on the packet - which generally means boiling water for 5-10 minutes. In the meantime, combine the following in pan and heat to make the sauce: 5 cups dashi, 2 tablespoons soy sauce, 3 tablespoons mirin, and 1/2 teaspoon salt.
Finally, drain the noodles and put them in a bowl along with the soup you made. Add some Kamaboko and the pre-prepared Kamaboko on top. Done! Authentic Kyoto Kitsune Udon.
Curry Udon:
Believe it or not, curry flavored anything (or kare as they like to call it) is remarkably popular in Japan. Don't be fooled though - Japanese curry generally taste nothing like real curry. It's sweeter and has pretty much zero spiciness to it. It was inevitable that as the Curry flavor invaded Japan, someone would decide to combine it with something traditional, like Udon. Here's what you'll need to make enough for 2:
- 1 cubes of Japanese curry stock. It IS different to regular curry powder, so be sure to hit up your local Asian supermarket.
- 2 tablespoons of dashi powder
- 1 tablespoon of rice wine
- A dash of Soy sauce
- 1 tablespoon of rice wine vinegar
- 1 and 1/2 bowls of water
That's it for the basic curry soup with Udon in it, but you're probably going to want something else in there too. I'd suggest the following ingredients, but it's really open to suggestion so don't feel like you have to follow exactly.
- 1 chicken breast
- 1 carrot
- A few shiitake mushrooms
- Some bamboo shoots
- Tofu slices
Preparation:
You'll need to boil the mushrooms for about 20 minutes if you buy the dried Chinese kind. If you buy fresh, the only other bit of prep you need to do is to cut the chicken into bite size pieces and slice the carrot. Drain the Udon, add the soup, and finish with some spring onions or sliced leek on top!
But first, I must clear something up. While browsing the web for Udon recipes, I find hundreds of sites that refer to the thin regular noodles as Udon. They aren't, they are simply Ramen noodles. Only one particular part of Japan has thin Udon noodles, and they don't export it. Udon noodles are very much thicker and altogether more meatier than regular noodles, so please don't confuse the two. That isn't to say that Ramen noodles aren't just as tasty, but the two are very distinct. In fact, if you wanted to make any of these recipes with with either kind of noodle, you could probably get away with it.
So today, I'm going to teach you two of my favorite student recipes from my memories of Udon. Yes, I do have many memories of Udon from Kyoto - not temples, shrines, geisha girls and beautiful scenery - but Udon. Anyway, as the Japanese would say "Let's learning cooking Udon!"
Kitsune Udon:
The is the incredibly cheap kind of Udon dish you can buy in Kyoto, though you could actually spend a fortune on one if you went to one of the high class Udon places. The name Kitsune, meaning Fox, comes from a legend that Japanese foxes like to eat the fried tofu stuff. Or so they say... It's a very simple recipe, and you will need:
- 1 or 2 slices of Abura Age, or Fried Tofu
- 1 pack of Udon per person.
- Dashi
- Soy sauce
- Mirin
- Kamaboko fish cake
Preparation:
We need to do a little prep on the Abura Age before cooking the main dish. First, pour boiling water over it to remove the excess oil. Next, put the Abura Age in a pan along with 3/4 cup of dashi, 1 tablespoon soy sauce, 1 tablespoon mirin, and 2 tablespoons of sugar. Simmer this until the watery part has disappeared leaving only the flavor filled Abura Age bits.
Next, heat the Udon noodles as indicated on the packet - which generally means boiling water for 5-10 minutes. In the meantime, combine the following in pan and heat to make the sauce: 5 cups dashi, 2 tablespoons soy sauce, 3 tablespoons mirin, and 1/2 teaspoon salt.
Finally, drain the noodles and put them in a bowl along with the soup you made. Add some Kamaboko and the pre-prepared Kamaboko on top. Done! Authentic Kyoto Kitsune Udon.
Curry Udon:
Believe it or not, curry flavored anything (or kare as they like to call it) is remarkably popular in Japan. Don't be fooled though - Japanese curry generally taste nothing like real curry. It's sweeter and has pretty much zero spiciness to it. It was inevitable that as the Curry flavor invaded Japan, someone would decide to combine it with something traditional, like Udon. Here's what you'll need to make enough for 2:
- 1 cubes of Japanese curry stock. It IS different to regular curry powder, so be sure to hit up your local Asian supermarket.
- 2 tablespoons of dashi powder
- 1 tablespoon of rice wine
- A dash of Soy sauce
- 1 tablespoon of rice wine vinegar
- 1 and 1/2 bowls of water
That's it for the basic curry soup with Udon in it, but you're probably going to want something else in there too. I'd suggest the following ingredients, but it's really open to suggestion so don't feel like you have to follow exactly.
- 1 chicken breast
- 1 carrot
- A few shiitake mushrooms
- Some bamboo shoots
- Tofu slices
Preparation:
You'll need to boil the mushrooms for about 20 minutes if you buy the dried Chinese kind. If you buy fresh, the only other bit of prep you need to do is to cut the chicken into bite size pieces and slice the carrot. Delicious Japanese Oden Recipe That Will Keep You Warm In Winter

There is a vast variety of dishes that Japanese cuisine offers.
There are also many regional specialties. Having lived in Japan for many
years taught me which dishes are best for summer and which are best for
winter. I remember the apartment that I rented when I first came to
Japan. It was just below the mountain and just beside a stream. The view
was awesome but it was terribly cold in winter. The apartment lacked
proper insulation unlike the apartments that we got at home. To help me
survive the cold winter nights, I had to dress up like an Santa Clause
and eat lots of oden.
So what is oden? Oden is a popular Japanese pot dish in which is simmered slowly in dashi (flavoring) or in a sauce based in soy sauce. It is usually prepared in a big ceramic pot called "donabe" or a big aluminum pot called "onabe". Oden ranks high and is a favorite of many Japanese families. There are many numbers of oden recipes and here is one.
Looking for the right ingredients is not easy if you do not have access to a Japanese grocery or store nearby. I was able to find some ingredients being sold online. Most of the ingredients are difficult to make from scratch and can be time consuming to prepare so I just buy them at a nearby Japanese grocery or buy them online.
Oden Recipe (for four)
Ingredients:
- One big radish
- Three carrots
- Three medium size potatoes
- Five boiled eggs (peeled or egg shell removed)
- Two blocks of "konyaku"
- Five fish cake blocks or "chikuwa"
- Three block of soft tofu
- Five slices of "atsuage" (deep fried tofu)
- Your choice of dashi flavoring (flavor broths) or soy sauce
- Three tablespoons of Japanese rice wine or "sake"
-Two tablespoons of sugar or "mirin"
Preparation:
- Peel the radish and slice it into thick rounds
- Peel potatoes and cut in half
- Peel and cut carrots into big pieces
- In a big pot, add all the ingredients listed above.
- Add fish cake and atsuage inside the pot.
- Add the dashi or flavoring, Japanese rice wine and sugar
- Add the eggs and the soft tofu
- Bring the pot to boil and add a bit of water and "dashi" when the level of the soup goes down.
- Reduce heat and its done

How To Select the Right Tofu For Your Recipe

Tofu is a very versatile food product that is great for both vegetarians and people wanting to limit their consumption of meat. Many consumers, however, don't understand the basic differences between the various types of tofu available for purchase. Depending on what you intend to do with the recipe, you'll either want to purchase it as firm, extra firm, or silken.
Firm tofu is the most popular type of tofu sold. It is usually sold in small plastic tubs in the dairy section of the grocery store. The main reason for its popularity is that it can be easily cubed and fried with little preparation. This tofu can be both pan-fried and deep-fried and will form a delicious golden crust with creamy middle when prepared. It can also be cubed and added to salads to provide a distinct texture that contrasts well with romaine lettuce and other green vegetables.
Extra firm tofu, also called brick tofu, is often used as a replacement for meat in both vegetarian and Asian cuisines. The tofu can be pressed in order to remove excess moisture and make it even more firm. At that point, it has the same texture and feel of meats such as chicken breast. Extra firm tofu can either be fried or grilled and can be served with pastas as well as on sandwiches You can even barbecue it.
Silken tofu is also known as Japanese tofu. It is a thick liquid that is similar in thickness to heavy cream. It can be used to prepare dips and mixes well with soups. One of the more common uses of silken tofu is to make light deserts that are dairy free. It pairs nicely with fruits such as strawberries and can be used to make an excellent parfait. When poured into an oiled skillet over medium high heat, it can be scrambled, the texture of which resembles scrambled eggs. Unlike firm and extra firm, silken tofu cannot be pressed as it crumbles very easily. Because of its delicate nature, it is usually sold in tetra packs in the grocery store.
If you're new to cooking with tofu, there really isn't any need to be intimidated by it. It is a very healthy food source that offers excellent nutrition and even helps to regulate estrogen levels in women. All you have to do is find a recipe that sounds appetizing and then buy the appropriate tofu for it. Once you've become adept at cooking with tofu, you may abandon meat products altogether.

Soy and mammographic density

In the evaluation of the association between serum levels of phytoestrogens and MD in postmenopausal women. 269 women, ages 55-70 yr, received a screening mammogram and had no history of postmenopausal hormone use, posted in PubMed, showed that Genistein and daidzein levels correlated with self-reported soy consumption. Mean percent MD did not differ across women with different phytoestrogen levels. For example, women with nondetectable genistein levels had mean density of 11.0% [95% confidence intervals (CI) = 9.9-12.4], compared to 10.5% (95% CI = 8.0-13.7) and 11.2% (95% CI = 8.7-14.6) for < and ≥median detectable levels, respectively. In a population with relatively low soy intake, serum phytoestrogens were not associated with mammographic density.

In a a systematic review and a meta-analysis to confirm the effects of soy isoflavone supplementation on body weight, fasting glucose, and insulin level in non-Asian postmenopausal women, posted in PubMed, researchers at the Public Health College, Harbin Medical University, Harbin, indicated that nine studies with 528 participants for body weight, 11 studies with 1182 participants for fasting glucose, and 11 studies with 1142 participants for fasting insulin were included, respectively. Significant reductions were found in body weight [weighted mean difference (WMD), -0.515; 95%CI: -0.895 to -0.134; P = 0.008), glucose level (WMD, -0.189; 95%CI: -0.344 to -0.033), and fasting insulin level (WMD, -0.940; 95%CI: -1.721 to -0.159) with soy isoflavone supplementation compared with placebo control group in non-Asian postmenopausal women after adjusted by unpublished studies. Furthermore, isoflavone supplementation in shorter duration (<6 mo) could significantly reduce body weight (WMD, -0.506; 95%CI: -0.888 to -0.124; P = 0.009) and longer duration (≥6 mo) could significantly reduce blood glucose in postmenopausal women (WMD, -0.270; 95%CI: -0.430 to -0.110; P = 0.001). Meanwhile, more reduction in body weight was observed in the lower dose subgroup (dose < 100 mg). Moreover, it is more effective to reduce body weight and fasting insulin level with soy isoflavone supplementation in normal weight (body mass index < 30) than obese (body mass index ≥ 30) women.

The Creative Tofu Recipe

As more and more people look for ways to optimize their health
they continue to turn a critical eye to the foods they are eating. What
they discover is that there are a bevy of delicious and nutritious
substitutes for the highly caloric and unhealthy foods they have been
eating up until this point. When it comes to finding protein sources
that do not contain the cholesterol and fat content found in meat
products, people are beginning to rediscover tofu. And as a way to
integrate tofu into every day life, people continue to add each tofu
recipe that they find into their stockpile of delicious dishes.
Tofu is a soybean based product made from curds that are pressed into useable blocks that can be used in a tofu recipe. Soft tofu, derived directly from soy milk, is extremely moist; because of its similarity to custard, it is often used as an ingredient in a tofu recipe for dessert. Firm tofu, that contains less moisture, holds its shape and is conducive to a main dish tofu recipe. Dried tofu has the lowest moisture content and is most like meat in its texture. When used in a tofu recipe, dried tofu is often crumbled, sliced, or pressed into noodles. Tofu has very little natural flavor; the reason people enjoy it is because the tofu found in a tofu recipe actually absorbs the flavors of the other ingredients in the dish.

Soy and red clover for mid-life and aging

In the review of the evidence available for use of isoflavones from soy and red clover for the treatment or prevention of these health issues, posted in PubMed, researchers at the University of Illinois, showed that Isoflavone products appear to be the most useful for improving lipid profiles; however, the evidence suggests that isoflavone extracts from soy are less effective than products containing soy protein or red clover isoflavones. Soy protein appears to reduce levels of total cholesterol and low density lipoprotein cholesterol, while red clover reduces levels of triglycerides and increases high density lipoprotein cholesterol. The data were somewhat less convincing, although promising, for increasing bone mass density and improving cognitive abilities.
