This to my mind is so much nicer than traditional mint sauce. The apple
and onion put a real spring in its step - helped on by the cider
vinegar. Goes wonderful with roast lamp or lamp chops.
Leave from a bunch of mint
1 apple - peeled, cored and roughly chopped
1 small onion - quartered
Good splash of cider vinegar
1. Process the mint, apple and onion in a blender - not too finely: it should have texture.
2. Add some salt and a good splash of vinegar. Taste to see if it needs a
little more of anything - it may take a couple of goes to get the
balance right. Then leave to marinade in the fridge.
3. Bring it back to room temperature before serving.
