In a small container with tight-fitting lid, combine 1 tablespoon each
olive oil and orange juice and 2 teaspoon balsamic vinegar. Peel and
cube 2 roasted beets. Add to the container, cover and shake. Add
shredded carrot along with (or in place of) the beets. Sprinkle with
feta cheese and season with salt and pepper.
