Preheat the oven to 500 degree F (260 degree C) lightly grease a baking
sheet with olive oil. Peel and thinly slice 2 or 3 beets or carrots ( or
1 of each). Arrange the slices in single layer on the prepared sheet.
Drizzle with olive oil and sprinkle with salt. Bake, turning once, until
crisp, about 20 minutes. Transfer to paper towels to drain.
