Eggplant Frittata

Frittatas are the Italian version of omelettes - except they aren't folded and they generally finish cooking under a broiler. This version includes plenty of Italian flavours from eggplant, red pepper and seasoning.
Cooking oil 2tsp. 10mL
Finely chopped peeled eggplant 11/2 cups 375 ml
Dried oregano 1/4tsp. 1mL
Large eggs 8 8
Finely chopped roasted red pepper 1/4 cup 60mL
Sliced green onion 2tbsp. 30mL
Garlic powder 1/4tsp. 2mL
Pepper 1/4tsp. 1mL
Heat cooking oil in large non-sticking frying pan on medium. Add eggplant and oregano. Cook for about 4 minutes, stirring occasionally, until eggplant is softened
Whisk remaining 6 ingredients in medium bowl. Pour over eggplant mixture. Reduce heat to medium-low, covered, for about 8 minutes until bottom is golden and top is almost set. Broil on centre rack oven for about 3 minutes until set. Cut into 6 wedges.
Tip: when baking or broiling food in a frying pan with a handle that isn't ovenproof. Wrap the handle in foil and keep it to the front of the oven, away from the element.

Balsami vinegar heightens the berry flavors in this tart topping for pancakes or hot cereal. Also good served chilled over roll or bread.
Frozen mixed berries, thawed 1 cup 250mL
Sliced fresh strawberries 1 cup 250mL
Mixed fruit (or berry) jam 1/2 cup 125mL
balsamic vinegar 2tbsp. 30mL

Easy and versatile recipe are the best friend of any cook. This recipe comes together quickly and can be served hot or cold. Goat cheese and fresh basil add a special touch.
Olive oil 1tbsp. 15mL
Thinly sliced red pepper 11/2 cups 375 mL
Thinly sliced yellow pepper 1/12 cup 375mL
Garlic cloves, thinly sliced 3 3
Salt sprinkle
Pepper, sprinkle
Whole wheat baguette bread slices, cut diagonally 1/4 inch (6mm) thick 18 18
Goat (Chevre) cheese, cut up 3Oz. 85g
Finely shredded basil 2tbsp. 30mL
Heat olive oil in large frying pan on medium. Add next 5 ingredients. Cook to about 15 minutes, stirring occasionally, until peppers are softened.
Arrange bread slices on ungreased baking sheet. Broil on top rack in oven for about 1 minute per side until golden. Spoon pepper mixture over top. Sprinkle with goat cheese and basil. make 18 crostini.

The addition od sundried tomato makes ordinary bruschetta extraordinary. There is no shortage of favor intensity here - garlic, green onion, fresh basil and 2 types of tomato pack a lot of punch.
Chopped seeded Roman (plum) tomato 2 cups 500mL
Sun-dried tomatoes in oil, chopped 1/2 cup 125mL
Finely shredded basil 1/4 cup 60mL
Sliced green onion 2tbsp. 30mL
Oil from sun-dried tomatoes 1tbsp. 15 mL
Red wine vinegar 2 tsp. 10mL
Garlic clove, minced ( or 1/4tsp., 1mL powder) 1 1
salt sprinkle
Pepper sprinkle
Baquette bread slices (1/2 inch, 12cm, thick)
Combine frist 9 ingredients in medium bowl. Let stand for 30 minutes to blend flavors.
Arrange bread slices on ungreased baking sheet. Broil on top rack in oven for about 1 minutes per side until golden. Spoon tomato mixture over top. Serve immediately. Makes 32 Bruschetta.

Full sized pizzas are so old fashioned. These cute little mini pizzas make a bold flavor statement and a chic addition to any appetizer tray.
Basil pesto 1/4 cup 60mL
Unbaked pizza crust (12inch, 30cm diameter) 1 1
Grated Italian cheese blend 1/2 cup 125mL
Finely chopped marinated artichoke hearts 1/4 cup 60mL
Finely chopped salami (Such as Genoa) 1/4 cup 60mL
Finely chopped sun-dried tomatoes in oil 1/4 cup 60mL
Spread pesto on pizza crust. Cut out circle with 2 inch (5cm) round cookie cutter. Arrange on greased baking sheet with sides. Discard remaining pizza crust scraps.
Combine remaining 4 ingredients in a small bowl. Spoon bout 2 tsp. (10mL) onto pizza crust rounds. Bake in 400 degree F (205 degree C) oven for about 12 minutes until cheese is melted and golden. Make about 22 pizzettes

Some like it hot and if you do, this recipe will be love at first bite. Hot Italian sausage adds a spicy punch to this other wise unassuming topping for sliced baguette
Cooking oil 1tsp. 5mL
Hot Italian sausage 1lb. 454g
Sliced red pepper 11/2 cups 375 mL
Sliced onion 1 cup 250mL
Garlic cloves, sliced 2 2 Chopped fresh oregano (1/2tsp. 2mL. dried) 2tsp. 10mL
Baguette 1 1
Heat cooking oil in large frying pan on medium. Add sausage. Cook for about 10 minutes, turning occasionally, until browned. Remove to cutting board. Cut into 1/2 inch (12mm) thick slices.
Add next 3 ingredients and sausage slices to same frying pan. Cook for about 8 minutes, stir occasionally, until onion is softened and sausage is no longer pink.
Add oregano. Stir with bread slice. Serve 8.

1 egg, beaten 1
salt and pepper to taste
1 tbsp. minced ginger root 15mL
2 green onions, finely chopped 2
2tbsp. chicken stock 25mL
2 tbsp. red bell pepper, finely chopped 25mL
3 cups cooked rice 750mL
salt and pepper to taste
1. in a non stick wok or large skillet, heat 1/2 tbsp. (7mL) oil over medium heat. Add eggs and cook to make a thin omelet by swirling the pan so the eggs flow onto as large as possible. Season lightly with salt and pepper. Remove, chopped coarsely and set aside.
2. heat remaining oil in wok over medium heat. Add ginger root and onions; stir-fry until fragrant, about 30 seconds. Add stock and red pepper; stir briefly. Add rice; stir-fry until well mixed and the grains are separated, about 2 minutes. Ass omelet pieces and stir to mix well. Season with salt and pepper; stir to mix. Serve immediately. Serving 4.

Vitamin B12 and Asthma

Respiratory Disease is defined as medical conditions which affect the breathing organ and tissues including Inflammatory lung disease, Obstructive lung diseases, Restrictive lung diseases, Respiratory tract infections, trachea, bronchi, bronchioles, alveoli, the nerves and muscles breathing , etc.
Asthma is a chronic inflammatory disease affecting the air way of the lung with recurring symptoms, such as wheezing, chest tightness, shortness of breath, and coughing. The disease affects people of all ages, and mostly starts during childhood. According to American academy, allergy, asthma and immunology, about 1 in 10 children (10%) had asthma and 1 in 12 adults (8%) had asthma in 2009. (about 25 million, or 8% of the U.S. population).
Vitamin B12, also known as cobalamin, a water-soluble vitamin, found abundantly in a variety of foods, such as fish, shellfish, meat, eggs, dairy products, etc. plays an important role in regulating the functions of nervous system and formation of blood.
The conflict results
Epidemiological studies, linking vitamin B12 in reduced risk and treatment of asthma have produced inconclusive results. Some researchers through searching the data base of asthma studies suggested that insufficient evidence exists to recommend supplementation with any vitamin or nutrient acting as a methyl donor to prevent or treat asthma(1). Other found the conflict results in the associated risk of the disease(2). Other insisted no correlation between vitamin B12 intake and risk of asthma or atopy(3). Intake of vitamin B12 during pregnancy may effect the incidence of asthma and asthmatic symptoms of offspring, but according to the Osaka Maternal and Child Health study, there was no correlation between maternal consumption of folate, vitamin B(12) , vitamin B(6) , and vitamin B(2) during pregnancy and the risk of wheeze or eczema in the offspring(4).
Because of limitation of quantity of the studies in the data base to determine the risk of dietary intake of vitamin B12' effect on asthmatics. We recommend the use of vitamin B12 with care in pregnancy. As always, over doses of the vitamin B12 may induce symptoms of toxicity, including headache, giddiness and abnormal heart functioning, etc., please make sure to follow the guideline of the Institute of Medicine of the National Academies.

1 large whole leek, white and green parts separate and finely chopped 1
3 cups cook rice 750mL
1tbsp. chicken stock 15mL
Salt and pepper to taste
1. heat a non stick wok or skillet over medium heat. Add bacon and fry until golden and just beginning to turn brown, about 2 minutes. Add white part of leeks and stir fry until wilted and fragrant about 1 minute. Add green part of leek and sir to mix thoroughly.
2. Add rice to mixture; stir-fry until well combined and the grain are separated, about 2 minutes. Add chicken stock; cook, stirring for 1 minute or until the rice is heated through. (Add more stock if the rice appears too dry). Season with salt and pepper; stir to mix. Serve immediately. Serving 4.

Folate, also known as folic acid, vitamin B9, is a water soluble vitamin, found abundantly in leafy vegetables, citrus fruits, beans, whole grain, etc. The vitamin plays an important role in synthesize DNA, repair DNA, and methylate DNA as well as to act as a cofactor in certain biological reactions, production of red blood cells for anemia prevention.
1. Serum levels of folate
Scientific studies, serum levels of folate may associate to risk of asthma. The study by Ain Shams University showed that serum folate levels are significantly lower among atopics, and correlate inversely with the degree of atopy among asthmatics(1). Other researchers suggested that low serum folate and impaired folate metabolism may be a potential risk factors for development of asthma and atopic disease. According to The Capital Region of Denmark, in a random sample of 6784 persons from a general population aged 30-60 years participated in a health examination in 1999-2001, low levels of serum of folate were associated with self-reported doctor-diagnosed asthma and attacks of shortness of breath, but not with lung function or atopy(2). The Johns Hopkins School of Medicine study also indicated that the effects of serum levels of folate were associated inversely associated with high total IgE levels, atopy, and wheeze(3).
2. The effects of folate in maternal intake
Folic acid supplementation has an established role in early pregnancy for preventing neural tube defects, but its causes of childhood asthma and asthmatic symptoms in epidemiological studies have been inconclusive. According to the University of Western Australia, maternal folic acid exposure may be associated to childhood asthma and wheeze(4). Other in the study of pre-natal FACSs exposure population showed a small increased risk of early wheeze, but no adverse association of respiratory or allergic outcomes(5). In the study using the data from an Australian prospective birth cohort study (n = 557) from 1998 to 2005. At 3.5 years and 5.5 years, 490 and 423 mothers and children participation, researchers at the The University of Adelaide, indicated the correlation of the supplementation with folate in pregnancy and incidence of childhood allergic asthma through epigenetic mechanisms and also associated with poorer respiratory outcomes in young children(6).
Since the search of the effect of folate intake in reduced risk and treatment of asthma have produced limitation of result, we concluded that folate deficiency or low levels of folate may be associated to increased risk of early onset of the disease, but multi centers and large sample size studies are necessary to improve its validation. Overdoses of folate may cause stomach problems, sleep problems, skin reactions, seizures, etc., please make sure you follow the guideline of the Institute of Medicine of the National Academies.

1 orange, juice and chopped zest
1. In a pot with a tight-fitting pod, combine rice, stock or water, salt, mustard, orange juice and zest. bring to boil; cook, uncovered, stirring occasionally.

3 eggs, beaten 3
Salt and pepper to taste
1 tbsp. minced ginger root 15 mL
2 green onion, finely chopped 2
2 cups diced cooked chicken meat 500mL
2 tbsp. chicken stock 25mL
1/2 cup frozen peas 125mL
1/2 cup can corn kernel 125 mL
3 cups cooked rice
Salt and pepper to taste
1. In a nonstick wok or skillet, heat 1/2 tbsp. (7mL) oil over medium heat. Add eggs; cook to make a thin omelet by swirling the pan so eggs flow onto as large a surface as possible. Season lightly with salt and pepper. Remove, chop coarsely and set aside
2. Heat remaining oil in wok over medium heat. Add ginger root and onion; fry until fragrant. about 30 seconds. Add chicken, chicken stock, pepper, peas and corn; stir 2 minutes. Add eggs and stor to mix well. Season with salt and pepper; stir to mix. Serve immediately. Serve 4.

Vitamin E, a fat soluble vitamin, consisting eight different variants (alpha-, beta-, gamma-, and delta-tocopherol and alpha-, beta-, gamma-, and delta-tocotrienol) with varying levels of biological activity(2), found abundantly in corn oil, soybean oil, margarine, wheat germ oil, sunflower,safflower oils, etc. plays an important role in neurological functions and inhibition of platelet aggregation, regulation of enzymatic activity, free radical scavenger, etc..
General consensus suggestion of increased dietary vitamin E intake is associated with a reduced incidence of asthma, due its antioxidant status, but epidemiological studies, linking vitamin E in reduced risk and treatment of asthma have not been conclusive(a)(b)(c)(d)(e).
1. Serum levels of vitamin E
Serum levels of vitamin in asthmatic patients may be correlated to the occurrence of the diseases. The University of Tampere study of five European rural settings with Children of 1133 mothers recruited during pregnancy, showed no associated of with allergies or asthma by 6 years of age regardless the concentration of vitamin E(1). and the study of the Yamaguchi University, also indicated no correlation of levels of vitamin E and asthma in the a total of Of 2796 students attending schools in Shunan, Japan, in 2006.(1a). The Northwestern University study indicated the opposing regulatory effects as allergic inflammation is inhibited by supplementation with the purified natural vitamin E isoform α-tocopherol but elevated by the isoform γ-tocopherol when administered at physiological tissue concentrations(5)(6). But according to University of North Carolina School of Medicine, γ-tocopherol (GT) significantly decreased (p < 0.05) internalization of attached zymosan bioparticles and macrophage expression of CD206, CD36 and CD86 in allergic asthmatics through downregulation of both innate and adaptive immune response elements, and atopic status(7). The composition containing 623 mg of gamma-tocopherol, 61.1 mg of d-alpha-tocopherol, 11.1 mg of d-beta-tocopherol (11.1 mg), and 231 mg of d-sigma-tocopherol capsule in Phase I human dosing study showed the decreased systemic oxidative stress, increased serum levels of gamma-tocopherol, and inhibited monocyte responses to LPS without any adverse health effects(8). IOvalbumin (OVA)-sensitized Brown Norway rats, treatment of gamma-tocopherol (gammaT), inhibited the pathogenesis of both AR and asthma inflammatory pathways(9). Suggestion of oxidant stress and diminished antioxidant defenses may be a cause of asthmatic disease(10) and uncontrolled asthma and severe asthma pattern have impaired antioxidant defenses and are thus most susceptible to the damaging effects of oxidative stress(11). 1500 IU of natural-source d-α-tocopheryl acetate daily for at least 16 weeks in volunteered asthmatic patient, showed to inhibited oxidant stress, through modulation of allergic inflammation and airway hyperresponsiveness in human atopic asthmatics in vivo(12).
Taken altogether, Aγ-tocopherol, a variant of vitamin E, may be effective in reduced risk and treatment of asthmatic disorder, but further large sample and in multi centers studies are necessary to validate it claims. Over doses of vitamin E supplement can cause symptoms of blurred vision, weakness, dizziness, nausea, diarrhea, etc., please make sure you follow the guideline of the Institute of Medicine of the National Academies.

Fried rice with Anchovies and cilantro

1. Fried rice with Anchovies and cilantro
1 tbsp. vegetable oil 15mL
4 oil-packed anchovy fillets 4
1tbsp. minced ginger root 15mL
3 cups cooked rice 750mL
1tbsp. chicken stock 15mL
1/4 cup finely chopped cilantro 50mL
salt and pepper to taste
1. In a nonstick wok or skillet, heat oil over medium heat. Add anchovies and ginger root; fry until fragrant, about 30 second.
2 Add rice and stir fry until the anchovy mixture is thoroughly integrated and the grains are separate, about 2 minutes, Add chicken stock; stir and cook until rice is heated through, about 1 minute. (Add more chicken stock if rice appears too dry). Add cilantro, stir to combine. Season with salt and pepper; stir to mix. Serve immediately. Make 4 serving.

Vitamin D and Asthma

Respiratory Disease is defined as medical conditions which affect the breathing organ and tissues including Inflammatory lung disease, Obstructive lung diseases, Restrictive lung diseases, Respiratory tract infections, trachea, bronchi, bronchioles, alveoli, the nerves and muscles breathing , etc.
Asthma is a chronic inflammatory disease affecting the air way of the lung with recurring symptoms, such as wheezing, chest tightness, shortness of breath, and coughing. The disease affects people of all ages, and mostly starts during childhood. According to American academy, allergy, asthma and immunology, about 1 in 10 children (10%) had asthma and 1 in 12 adults (8%) had asthma in 2009. (about 25 million, or 8% of the U.S. population).
Vitamin D is a fat-soluble secosteroids found in small amount in few foods, including salmon, mackerel, sardines and tuna. The vitamin plays an important role in modulation of cellular proliferation, apoptosis induction, tumor growth suppression and promotion in absorption of minerals, including calcium, iron, magnesium, phosphate and zinc.
1. Serum of vitamin D
Epidemiological studies, linking the levels of serum 25-OH vitamin D with asthma may be inconclusive. The study of included 4,999 adults aged 30-60 years in 1999-2001. 3,032 of those included at baseline also participated at a follow-up examination 5 years later and 3,727 answered a 10 year follow-up questionnaire, showed no association of serum serum 25-OH vitamin D and the risk of asthma in Danish adults(1)(1a). Some researchers in the study of general Korean population suggested that vitamin D-insufficiency may have an increased likelihood of atopic dermatitis, but not asthma, allergic rhinitis, or IgE sensitization(2)(2a). But the study by Royal Brompton Hospital, London indicated otherwise of relationships between serum vitamin D, lung function, and pathology in children with severe, therapy-resistant asthma (STRA)(3)(4) and 25 hydroxyvitamin D insufficiency wass associated with bronchial asthma(4a) On the other hand, the study of iMayo Clinic indicated the correlation between serum 25(OH)D concentrations and positive pneumococcal antibody levels in all subjects regardless of asthma(5).
2. The benefits
According to the study by Universitätsmedizin Berlin, oral administration of vitamin D in vitamin D deficiency induced asthma, showed an increased expression of CD38 on B cells and a decreased T-cell-dependent proinflammatory cytokine production(6). In support to above study, Vitamin D found to decreased inflammatory cytokine production from T-cell subsets implicated in asthma, according to Florida Atlantic University(7). In patient with steroid-resistant (SR) and steroid-sensitive (SS) asthma, oral administration of vitamin D, although exerted its anti-inflammatory and corticosteroid-enhancing effects in monocytes of patients with SR asthma and patients with SS asthma, the responses to corticosteroids in patients with SR asthma remained significantly lower than those in patients with SS asthma(8). Other in the study of the effect of vitamin D in severe therapy-resistant asthma (STRA) patients, showed an positive effect of 1α,25-dihydroxyvitamin D3, the active form of vitamin D in culture enhanced dexamethasone-induced IL-10 (Defective IL-10 expression causes a significantly diminished levels of anti-inflammatory interleukin (IL)-10))without marked effects on IL-13 or IL-17A production(9). Patients with severe asthma exhibited increased levels of TH17 cytokines.The study of King's College London, also suggested that 1,25(OH)2D3 inhibits TH17 cytokine production in all patients with moderate-to-severe asthma(10), enhances the frequency of Treg cells(11)and upregulates CD200 on peripheral human CD4+ T cells(12).
Taken altogether, without going into reviews, vitamin D used conjunction with other anti asthma medicine and its the active form 1α,25-dihydroxyvitamin D3, may be associated to reduced risk and treatment of asthmatic diseases. Over doses of vitamin D supplement may cause excessive calcium absorption, calcification, Urinary stones etc. please make sure to follow the guideline of the Institute of Medicine of the National Academies.

This smoothie is a sinfully sweet blend of nutritious goji berries, tropical coconut and warming cinnamon. Enjoy it on cooler days when you are craving something rich and satisfying.
Tips:
Goji berries are small native to China and Tibet. They have a mildly sweet favor and are great addition to smoothie. You can find them in natural foods store and most well stocked grocery store.
Coconut oils is solid in room temperature. it has a melting temperature of 76 degree F (24 degree C), so it is easy to liquefy. To melt it, place in a shallow glass bowl over a pot of simmering water
1 cup nut milk 250mL
1 banana 1
1/4 cup goji berries 60mL
2tbsp. melted coconut oil 30mL
1/4 tsp. ground cinnamon
In a blender, combine nut milk, banana, goji berries, coconut oil and cinnamon. Blend at high speed until smooth. Serve immediately. Make1/12 cups (375mL).
Variation Chocolate Goji cream smoothie: Substitute 2 tbsp. (30mL) raw cacao powder for cinnamon and add 1 - tbsp. (15 - 30mL) raw agave nectar depending on desired sweetness

The study of the effects of antioxidant nutritional status with allergic rhinitis (AR) in Korean schoolchildren aged 6-12 years, in a total of 4,554 children in Seoul, Korea, showed a positive effect of Vitamin C intake negatively associated with an increased risk of AR symptoms(1). According to the Rabin Medical Center, vitamin C also enhanced the protective effect on the hyperreactive airways of patients with exercise-induced asthma (EIA)(2). Oxidative stress mediated by reactive oxygen species is known to contribute to the inflammatory process of bronchial asthma. According to Dr. Ruprai RK., in the study of the oxidative stress plasma malondialdehyde and ascorbic acid (Vitamin C) showed an oxidative imbalance in asthmatic patients and antioxidant supply may have a beneficial impact on the free radical induced injury and improvement of respiratory reserve in Asthmatics(3)(4). In Saudi asthmatic patients, King Saud University study, exhibition of oxidative stress and defective antioxidant status of these patients suggested these may be primary causative factor in the pathogenesis of asthma(5).
In mega doses, vitamin C in asthmatic patients decreased airway hyperreactivity to methacholine, inflammatory cell numbers in brochoalveolar lavage fluid, and moderated reduction of perivascular and peribronchiolar inflammatory cell infiltration(6).

Asthma is a chronic inflammatory disease affecting the air way of the lung with recurring symptoms, such as wheezing, chest tightness, shortness of breath, and coughing. According to American academy, allergy, asthma and immunology, about 1 in 10 children (10%) had asthma and 1 in 12 adults (8%) had asthma in 2009. (about 25 million, or 8% of the U.S. population).
Epidemiological studies, linking vitamin C in reduced risk and treatment of asthma have been inconclusive(a)(b)(c)(d).
The study of the effects of antioxidant nutritional status with allergic rhinitis (AR) in Korean schoolchildren aged 6-12 years, in a total of 4,554 children in Seoul, Korea, showed a positive effect of Vitamin C intake negatively associated with an increased risk of AR symptoms(1). According to the Rabin Medical Center, vitamin C also enhanced the protective effect on the hyperreactive airways of patients with exercise-induced asthma (EIA)(2). Oxidative stress mediated by reactive oxygen species is known to contribute to the inflammatory process of bronchial asthma. According to Dr. Ruprai RK., in the study of the oxidative stress plasma malondialdehyde and ascorbic acid (Vitamin C) showed an oxidative imbalance in asthmatic patients and antioxidant supply may have a beneficial impact on the free radical induced injury and improvement of respiratory reserve in Asthmatics(3)(4). In Saudi asthmatic patients, King Saud University study, exhibition of oxidative stress and defective antioxidant status of these patients suggested these may be primary causative factor in the pathogenesis of asthma(5).
In mega doses, vitamin C in asthmatic patients decreased airway hyperreactivity to methacholine, inflammatory cell numbers in brochoalveolar lavage fluid, and moderated reduction of perivascular and peribronchiolar inflammatory cell infiltration(6).
